Cayenne rub Blue cheese heat with baby reds smashed with mustard butter

I know it's July and it's hot , but I couldn't resist. This one I got from a kid who work at Guiseppe's, Oliver. Variations on a theme.

serving size: 1

Steak
3-4ozSteak...(shown it top loin.)
cayenne rub (see below)
blue cheese

Potatoes

5 baby red potatoes or fingerling size
1 tsp. dry mustard (should be some what moist though)
pch. salt
pch. pepper
1 Tbl Butter

Set potatoes to boil. Cook till the tine of a fork is firm but gives. Strain and let rest.
Dry rub cayenne mix on steak pieces and pan sear. Tranfer to broiler and broil broil one side flip and add blue cheese. Broil and melt blue cheese. Pull the steak and let rest. Smash potatoes with a rubber spatula add in butter , salt, pepper, mustard.

1 teaspoon c. pepper
1 teaspoon Paprika
2 teaspoon salt
pinch of mexican smoked salt (stuff is strong!)
1/2 teaspoon ckd black pepper

  1. Post eating post: the balance of the heat and the blue cheese needs to be good or one of them will over power you. In this case , the blue cheese a little bit. Potatoes were great.
